Title: Recommended temp for jerky?

I think I'm going to break in my new OBS will be about 10 lbs of venison jerky.  This will be my first attempt at jerky.

Can someone give me an idea on the temp I should set my smoker?

Does 190*f sound right?

Heat the smoker to 160F when you add the jerky lower the temperature to 120F
Smoke for up to two hours and gradually up the temp to 140F with the vent wide open.
I like Hickory smoke.
Rotate the racks every hour top to bottom front to back and check for desired dryness.
As the pieces get done put them in a paper bag to absorb any surface oils

Devo has you taken care of but if you want to make the degree symbol press the ALT button and simultaneously press 0176 after the desired degrees :)

My smoker should be here by the weekend so I'll try to post some pic's when I get it seasoned and fired up.
