Title: Pork Jerky

I thought I would try some Pork Jerky this time. I took out a pork loin saturday night really thinking it would slice right up frozen at -10° F WRONG. So I put it in the fridge and sliced it up this morning, soaked it in Lems Jerky Brine, #1 Cure and know getting a real late start in the smoker.....

Now that should be real good key, nice lean cut of pork, never did pork jerky but I will wait for your opinion if it is real good ...

Thought of it but havnt done it. Pork Rules! Cant go wrong. It would be good plain and dryed.

Man that stuff is purrrity! What does it taste like. I assume you didnt use cure or brine so probably not a ham or bacon taste. So describe it please.

I did use #1 cure in lems wet brine. It taste just like slow bbq'd pulled pork as I  used hickory smoke and of course lems jerky seasoning. Pretty good stuff. I think it needs tomato paste next time to give it a bbq sauce flavor.
