Title: Shelf life of snack sticks and smoked sausages ??

How long will smoked sausage and snack sticks keep in the refrigerator (both have been cooked with cure#1)? ( I know, in most cases they should only last one day because they will be eaten ..... :) ha...ha...)

I like to thaw some out and keep them in the fridge for "snacking" but don't want to let them go bad.  :'(

Also, I read something about adding (1 tsp per pound ?) of citric acid to snack sticks to prolong their life ... is this true? If so, how long would they keep if the acid is added?  ???

3-6 days in the fridge. Vac sealed 2-3 weeks. Dont zip lock bag them, creates moisture and they will go bad faster. Vac seal and freeze for 8-12 months.

In most cases citric acid wont prolong shelf stability. CA makes the meat tangy like a store bought slim jim. Most of the time CA is used in the form of ECA, Encapsulated Citric Acid.
