Title: File` Gumbo Special
Post by: slowpoke on May 05, 2012, 04:47:59 AM
Well the cold weather is almost gone this year,so I thought I'd put down a batch of hot stuff.,one last time lol.
I love my Gumbo, but I add a few extras in it,like mussels. The recipes calls for oakra, shrimp and andouille sausage,(I sub with hot Italian).I also add chicken. All in all it comes out super every time.

It looks good.

I have sassafras trees on my property, that are growing like weed. Every year I try to make my on filé powder, just can't get it as fine as I would like.

Thanks.  Filé has to be real fine, and I have to go through a couple of grinding and shifting steps. Also in my research, there seems to be a disagreement whether to use the leaves gathered in early spring, or wait until late fall. The batches I make are descent, but there is room for improvement.

I didn't realize it was that much work.May-be it is cheaper in the long run to buy some.I can put my time into more important things, like cleaning the smoker trays lol
