Title: More bacon (and sausage)
Post by: ratherbboating on May 08, 2012, 10:26:25 AM
Been busy making bacon and sausage.  So now is the time to post some what I made.
Followed 10 point on the the bacon.
Before slicing, it weight 17 lbs raw.

After slicing

These slabs where thinner than the last batch.  Made slicing a litter harder and more bits&pieces.  Also, not shown was another slab that I tried Coke vs maple syrup, no real difference in taste.  I think the wood (apple and cherry) make the big difference in taste on this bacon.

Kielbasa(http://i805.photobucket.com/albums/yy339/ratherbboating/May%208/andoui.jpg).  Added cracked black pepper for a little extra spice.

Boudin, turned out good, I would have liked a little more spice, but my wife said no.

This one I copied from http://forum.bradleysmoker.com/index.php?topic=26528.msg317392#msg317392 (http://forum.bradleysmoker.com/index.php?topic=26528.msg317392#msg317392)

Bratwurst, copied from Len Poli site, Wisconsin Style Bratwurst, Johnsonville Clone.  This was was a winner.  Had it twice now, steam in beer and pickel cabbage. Yum Yum
