Title: Knockwurst

Well sitting here just thinking. Been awful busy with every thing. But getting the urge to smoke. Also though garlic sounds good. So I think i'll get the meat out and thaw and make some German Garlic Knockers. I have a recipe I been wanting to try any way.

Well made up my knockers today. But my helper who cranks my stuffer was a sleep on the couch.  She has pneumonia bad and I didn't have the heart to wake her. So I'm  thinking I can't do this my self very fast. So what to do. I grab a few larger Bologna type casings. Them I can handle. Well never seen it in large casing and best I can search I haven't found any who make it like that. But I did! So now after smoking for a long time with 2 hours of Cherry and 1 hr 20 min of alder they are done and blooming. Haven't cut and wont till tomorrow. But I did take some left over and backed burgers from that and it was very good. Just a small bite from the pepper. I also added extra garlic and Coriander.Tasted real good. Hope the loafs come out as well. Thinking i will slice some thin  for regular sandwiches and some thicker to fry or cut up for crackers and cheese. lunch tomorrow, Knockwurst, sauerkraut. Hot mustard. To make it original maybe sliced cucumbers and sliced caramelized onions. Pics to follow soon.
