Title: Liquid smoke ... How much to use per pound ??
Post by: Old Frenchie on May 22, 2012, 12:13:41 PM
I want to try a small batch of hot dogs that will not go into the smoker ... just stuffed and poached.

How much liquid smoke should I use to get a smokey flavor?  I have seen some recipes with 1/4tsp per pound and others with 1/2 tsp per pound. I even saw one recipe that called for 4.5 tsp per pound (thought this might be a typo??) !!

Thanks,
Roger

1/2 tsp per every 5 lbs of meat. Use more if you like it smoky.
