Title: German sausage cook time

I've got 7# of sausage in my smoker, I increased the temp up from 130 to 160 over 4 hrs and the sausage is only at 138 after 12 hrs. How long does it usually take to get to 152? I check the temp probes and their are reading correctly.

Im not a sausage maker, but when my co-wokers give me some of his home made sausage, I will smoke it for 3 hours and finish it off in a water bath. Comes out great. Hopefully others will be by with better info for you. Good luck.

Did you try moving the temp probes to a different sausage. Maybe lower the sausages if you have room.

move probe into different sausage and still had same temp, I have 3 racks and am cooking on top 3 position. At 146 now, starting to get over the stall. I was just curious how look it takes you guys when you do yours.

12 hours for 7 lbs is quite a time. I dont use probe in meat while doing sausage, too many false readings.

Like Nepas said the temp probes can give you a false reading. I was experiencing the same problem until I purchased the instant read Thermapen. Very good investment.
