Title: Kalbsbrust Pastrami

A local market had a sale on bone-in veal breast a couple of weeks ago and I bought a 3kg piece.  Corned it via Len Poli's corned beef recipe and then turned it into veal pastrami in the OBS.

No pix of raw or corned because most everyone has made their own here.

This is just out of the OBS - smoker temp 225 and IT 165 using oak -

Wish I'd made some cole slaw but this is a three day weekend (Pfingsten - a religious holiday here) and shops are shut.  In the spice mix coating the corned veal just prior to smoking I used Tellicherry pepper, coriander and chopped garlic.  The Tellicherry adds a nice kick.
