Title: What to do when recovering from surgery and bored
Post by: GusRobin on June 02, 2012, 02:49:33 PM
I have been recovering from cervical disk surgery that I had Friday before last. I am restricted on what I can do (can't drive, can't lift over 5 lbs.,etc). In other words I am bored out of my mind.
So yesterday I decided to smoke a pork butt that I had in the freezer. Don't worry it was a small one and after trimming it was at 5.5 lbs which I figure is close enough to the weight restrictions.
I was going to try to follow SouthernSmoked's molasses recipe but veered a bit.

So I gathered the troops. Some Dizzy Dust, jalapeno rub, and molasses for the base.

Slathered the butt with the molasses and the rub

Wrapped it up for a good night's rest

I got up at 5:30 this morning, pulled the butt out of the fridge and added a little more rub and into the Bradley at 225* and 4 hours of hickory.

Then I went back to sleep and woke up at about 8:30 to check it. Looking good.

This was a stubborn butt, it was only 5.5 lbs and was cooked by itself. Yet it took 10.5 hours. To give an example of the stall, at 10am it was 156*; at 10:42 it was 160*; at 11:26 it was 163; at 3:00 it was 171 and finally broke the stall.
Here it is ready to come out. (Notice the quality control piece missing.)

Ready to FTC.

So now I'll wait a couple of hours and we'll have pulled pork sammies, and potato salad.

Looks great, I'll put in a prayer request for you at church, back problems I've been there done that. I took up guitar playing to keep from going crazy, probably the only reason I'm sane today!

Gus
It sounds like you are doing rather good. I am a little slower to get glued together. They fused my lower back and I feel like Humpty Dumpty. Kind of cracked and loose and not quite glued back together yet. I just took a 15 minute walk and am kind of sore. It is going to be a while before I get to the smoker. Nice job on the pork. Take it slow and don't get into trouble moving too much at first
