Thing about it, I've done regular bacon now for almost 7 years. I did one canadian style loin when I first got my Bradley, but did a dry rub cure which didn't turn out too great. This time i brined it and it turned out beautiful. We did eggs benedict this evening for supper and it was great!! We couldn't wait for breakfast. Might have it for breakfast tomorrow anyway!
