Soon I will cook about 16 racks of ribs in 1 day. The only way to do this is in batches and finish them in the oven. Today I did a trial run of 4 hours of smoke then finishing them in the oven. With my PID I am use to seeing no temperature difference but in the oven there was 20 degree swing. I don't think that this is abnormal but it is just a point of interest.
