Could someone please tell me what should be the internal temperature for sticks?  How about chopped and formed jerky(ground Jerky)??

Cook the sticks to 145 degrees if you have added a cure.

These jerky things--you say they're chopped? Does that mean you're using ground beef?

meat on the hoof like venison and beef , ground or solid ,jerky sausage or sticks cured or not cured better safe then sorry when feeding it to friends and family in my opinion from what I have read(opinions again scary) you will always be safe at  152 F   that should be #1 safe quality products
