Title: new to smoking

This will be my first time smoking what is the best flavor to start with. I really like the carnival smoked turkey legs anybody no what type of wood works best for that.

It is all a matter of personal taste. I like hickory. With poultry, I use about 3 hrs of smoke. If you use less strong pucks like pecan you can use more. Just keep track of what you do so you can make adjustments the next time.

I like apple or cherry for turkey legs although it seems that everybody at fairs and things around here use hickory.
