Title: Newbie Question
Post by: jj112903 on June 15, 2012, 02:07:27 PM
I am smoking a 5 lb. pork loin, a 2.5 lb pork loin and a 4lb brisket for fathers day.  What would be an ideal cooking time for these?  I've got the pork loin mastered.....will be my first time with brisket.  Any suggestions?

Thanks, BTW...I love my Bradley Smoker!!

I don't cook by time but rather by internal temp.  A brisket much like a butt is done when it is done.  However just as a guideline try 1.5-2 hours per pound of your brisket.  In your case that would be 6-8 hours but don't be surprised if it takes longer.  If it finishes sooner than planned you can wrap it in foil and then in a beach towel and place in a dry cooler.  It will hold just fine for up to 4 hours and allow the juices to redistribute.

Ditto on KyNola's  reply. To add, I had a 10lb brisket take right at ten hour mark. So be prepared in case it cooks quicker then anticipated. That was at 225*. Good luck and remember to post pics :)
