Title: Canadian Bacon first try

After reading about all the people out there making Canadian bacon I had to give it a try.  I use Hab's recipe with tender quick.  I cured it for 7 days then rolled 2 hr hickory ( wanted to use maple but have had a hard time finding it local guess I will have to look online.) It turned out great but next time I will add more sugar to sweeten it up.  My 7 y/o son who is addicted to ham approves!  So we will try it again.

The sliced piece on top almost looks like it could be venison. I have used the dry cure method on venison backstraps for some awesome VCB

That there Canadian bacon makes for a killer ham N cheese sammie.  ;)
