Title: Soy Flour - the same thing as Soy Protein concentrate ??
Post by: Old Frenchie on June 20, 2012, 05:24:53 PM
I will be picking up a few things from "Friscos" during a trip to Omaha. One item I'm wanting is "soy protein concentrate" but all they have is "Soy Flour" on their website listed under sausage additives.

http://www.friscospices.com/p-242-soy-protein.aspx

Is this the same thing?? I emailed them but have not received a response.

Should this be used 1:1 for soy protein concentrate ??

Thanks,
Roger

It's hard to tell without them providing a better description. Soy Protein Concentrate is Soy Flour that has been process to remove many of the fats and carbohydrates until it is at least around 70% protein.

I purchase mine from Sausage Maker, but since you are in Nebraska, why not order it from:

Allied Kenco (http://www.alliedkenco.com/search.aspx?find=soy)

I use both and at times buckwheat flour.

Hab ... I figured I could save on shipping as I don't really need anything else right now. Its disappointing that Friscos does not respond to customer's inquiries about their products  :( . I think I'll stick with Allied ... they've treated me well in the past.  :)

NePaS ... informative as usual !

Thanks to both of you,
Roger

Sometimes it takes a wile for Mike to back with folks, he travels allot and is not always in the office. Heck I rarely see him when I go there.

Any how the flour (50% protein) and concentrate (70% protein) are not the same.

Check this out, they have some good info and not tryin to sell you a product.

For me the "chew" in sausage is better with the concentrate, the flour makes the "chew" kinda mushy.

The higher protein makes a far better sausage,,,,,,,,,,,,,,,,just sayin.  ;D

Thanks OU812 ...

I appreciate the response.

I'll get the concentrate from Allied on my next order.  Being a newbie, that won't be very long ... I'm already finding all sorts of thing I "need"  ;D
