Post by: mhiykmeel63 on June 24, 2012, 05:21:17 PM
Hey guys,I want to do some of the beef and venison nuggets. I have a couple packs of hi mt jerky seasoning in different flavors. My question co0ncerns the cure, its .85% sodium nitrate. Is tghis the same as cure #1? will it still work?

No it is not the same as cure #1; which is .625% sodium nitrite.  As Devo pointed out, just follow the instructions that came with the cure that you are using.

So if Im using teriyaki sauce,id just mix the cure right in with it? It says smoke for 2 hours will that be enough time to cook/dry?
