Title: Dammit Sam Coonass Paella
Post by: Ka Honu on June 24, 2012, 10:26:26 PM
SamuelG's Spanish Night post (http://forum.bradleysmoker.com/index.php?topic=28862.msg343558#msg343558) got me hungry for paella and I've been wanting to make some Cajun jambalaya (We don't need no stinking tomatoes!) so I went and combined the two...

Got all prepped...

Browned chopped up tasso and then some chicken & shrimp (separately, seasoned with Soileau's).

Set the protein aside and browned half the trinity and the garlic with some more Soileau's and bay leaves, added rice for a couple of minutes and then stirred in stock and the rest of the trinity.  Put the chicken and tasso back in and let it go until almost done...

...before adding the shrimp back in and serving.

Excellent reviews, no leftovers.  Thanks for the inspiration (and one of these days I'll learn how to take decent photos. Or not).

Yes (bought it in La Boqueria in Barcelona); it's 13 inches across the top.  Advantage is that it fits the large stovetop burner (as well as the grill).  Disadvantage is that it only feeds four (but it feeds them well).

I got that size purposely - good paella's too damn expensive to make for a crowd.

How true is that!!!

Lately when ever I get a request for the large one that I have ( 30+) I just have the ingredients paid for.

But it is expensive.
