I've read all the recipes for smoked Halibut and have modified them for our taste mainly because we don't like salty food. This recipe will provide you with the best halibut and maybe the best fish you've ever had.
Soaked 2 6oz pieces of halibut for 1 hour in plastic bag containing;
1 ¾ cup of water
1 Tablespoon of kosher salt
1 Teaspoon of brown sugar
1 Twig of fresh dill
Preheated smoker to 220
Made little aluminum trays 1 for each piece and placed a little butter and some dill under each piece of fish
Coated the fish with;
Fresh lemon juice
Butter
Garlic and dill
Placed in smoker for 1 hour of alder smoke at 220 on bottom rack and basted every 15 min.
This looks good, will have to give it a try.
Pulling some fish out of the freezer now. I will try it tonight.

Let me know how you liked it. I was surprised how moist and tender it was.
