Stopped by a local BBQ shack on Lake Poinsett called Smokin Johnny's. The food was excellent! We got to talking to the lady running the smoker and she ran down what was in their rub....probably left out a thing or two and didn't give quantities. She mentioned that their rub had coffee in it. That is the first I had really heard of that in a rub.
Anyone used coffee in a rib rub or have a good one to share?

Yes i use it quite often and some would probably call it my signature.. LOL Started in Kentucky where when they fry up pork chops. They brown the chops in a frying pan then add a couple cups of real dark black coffee to the pan and simmer. Truly a great meat.
I add it into my sauces and rubs. And slip some into my jerky and other marinades. Usually not enough to over power but a hint you can taste and some times cant identify. If your a coffee lover try it you'll love it. And don't forget the chops there great like that. My favorite shake is also aJamoka shake! ::)

LOL Mike no secrets. just dont have a recipe. I use a little coffee in all my rubs at times. But never ad it till the last minute. Wife dont like coffee so I use it on things me and others that do. I really like it added to Jan's rub too. But its one of those ingredients for me I never know for sure till the last minute. Like on a butt or something I'll Use Jans maybe on the butt or even Bad Bryans but add a few cups of black coffee to the liquid. I really dont like instant coffee taste. And if im using a ground coffee dry I grind to a light powder to add to spices along with my ghost pepper dust when I have it. The two relly go well together.

so these sauces are good? I hate buying sauces I'd rather make my own but my fiance LOVES coffee and she has been loving the cooking why not combine them. WHat do you recommend?

I have done prime rib roasts with a heavy coffee rub. Forms a phenomenal crust and the flavour is incredible. Go for it!

Chipotle Mustard Fusion and Tonsil Tickler are the two I use all the time.
