Hi there Just a quick hi while I smoke some king salmon in my 6 rack digi. I am Dave and live by the ocean in Norcal. I mostly smoke King Salmon and Albacore tuna. I was a chef as my profession and career(25 years everything from pub food to five star hotel in Vail Co.) until I bought a fishing charter business in Northern Idaho. Now retired and fishing for fun. I am just getting started with this smoker so as the learning progresses I will pass on my experiences. I am sure you will have plenty to teach me as I peruse the threads. Have a great day and stay smokey....... ;D
