Title: Tri-Tip

I bought a tri-tip today that I'll smoke next weekend.  Here's my question, it's in a cryovac pak.  Can I just leave it in the refrigerator and wet age it like a brisket or do I need to freeze it?  Again, I'm not going to smoke it until a week from Sunday.  Thanks in advance.

Not sure about the wet aging on a smaller cut of meat but I would think it being cryovac packaged it should be fine for a week.

I would say that it's fine in the
Cryo vac. I left a brisket in the
Cryo vac for about 21 days before I smoked it. I'm still here.

It will be alright. I have wet aged cryovac Top Loin, but I didn't take it past the sell by date.
