Title: Nuggets help

So I made my first batch of Muebe nuggets yesterday using the mock soya vay recipe....gave the nuggets an 1 hour of heat, then 2 hours of smoke, and another 3 hours of drying time (6 hrs total).  The nuggets turned out great, tastey, not to tough not to tender, etc....

I put a few loads into zip lock bags and left them on the counter over night (the others were vacuum sealed and put in the fridge) and now I have what is either oils from the meat or the mock soya vay coming out of the nuggets that were left out.  Do I need to dry the nuggets out more?

Welcome to the forums.

If you put the nuggets in a plastic bag when they were still a bit warm it can cause condensation inside the bag, if that is not the case then I'm not sure if you want to dry them more. Someone with a lot more experience than me will chime in soon.

Ditto.

I dry mine in a paper bag overnight, (yes, your fridge will smell like Nuggets!) then into vacbags.

Thanks gentlemen....will have to purchase some paper bags for the next batch.
