Has any one tried cream cheese filling in a ground beef fattie?
Will the cream cheese hold up under the heat, or should I use some other cheese?
Would Velveeta be better?

As long as you sealed the cheese in the ground meat it should be fine. I have put a cream cheese filling in a pineapple then wrapped the whole thing in a bacon weave and it stayed in just fine. Velveeta would be very tasty as well, kinda like a Juicy Lucy Fatty.

Yep. Do it all the time... Works quite nicely..
I use cream cheese for my ABTs. I hit them full blast high in my SRG and it holds up perfect. Ditto on the velveta not holding as good as the cream. I bet the V inside a fattie would be excellent.

This is my first try at a fattie.
I may try two small logs, one with cream cheese and one with Velveeta.
I'll let you know how they turn out.

Smoked the two fatties yesterday.
Used 1 lb. ground beef, 1 lb. bacon, 4 oz. cheese filling for each. (1 w/Velveeta, 1 w/cream cheese, various spices, diced onions and peppers in both.)
