Might as well get the Photographic Memory Album up and running for this years Smoke Out
Started cooking for the Smoke Out. Never mind the fact that it is 103º outside. It will just help keep the temps up. (Not that the Dragon Lady needs any help.)
Up first in the line up is Sliced Turkey Breast meat.
Relatively easy first you drive 2 hours one way to pick up a Turkey Boulder from a friend. (Thanks Squirt)
Thaw for an hour in cold water to remove the foil wrapper that was on the boulder. Place in a foil tray for transport

Peel off the skin from the front of the breast and lay out flat in the Dragon Lady. (Traeger) Season with Zach's Hickory Rub.
Place still basically frozen Turkey Boulder on top of skin. Lightly rub some (1Tbs) oil over the boulder. Season again with more Hickory Rub. Slide into the business end of the Dragon Lady and fire her up. Once she is lit and breathing fire, close door. Set temp to 250º and walk away. Remember it is frozen solid can't put a probe in it yet. Will be shooting for an IT of 155º

OK Turkey boulder is all done got busy and the temp slipped up to 169 but it is in FTC in Microwave for a few hours then it will take a nap in the fridge over night. Will slice it in the morning.

Like Wow I will be doing more of these. Remember I don't like poultry but this thing turned out great. The flavor is like a ham almost. The meat is nice and juicy. Never thought I would get a 3/4-1 inch Smoke Ring on the boulder. It is there its light but it is there. Even pointed it out.

I fired mine up and 20 minutes later we had some Chicken Wings. While they was cooling off, I put the grill on the SRG and set about heating up some of them Pork and Shrimp Sausages. We sent this home with Brian (Bam1)

That would be the Ammo Can that I keep my propane torch in. I had to use the torch to light the fryer to make homemade Tortilla Chips.

The last of the travelers has gotten on the road home. I will do some final clean up outside, then will sit down and up load the pictures I have. The videographer (Squirtthecat) forgot his laptop so he will be loading his up when he gets home or Monday morning sometime.
Did have one person show up. Talked to everyone, was a real nice fella. I never did catch his name. Too busy getting food ready I guess. Maybe one of the others can say who it is. I did find a picture of him on my phone. I think 10.5 1/4 might have taken it. Here it is

Saturday morning the day of the Smoke Out.
I found two of these a sitting in my freezer. Si I says to Bam1. How's about some pulled beef?

They was frozen solid. I seasoned both sides with some Billy Bob's Seasoning (Thanks SouthernSmoked) and into the Traeger they went at 250º. They was pulled and shredded at 200º it was dinner time so no FTC.

Then I says to Bam1. Now we need to do some pork loin. I saw something on the forum about somebody doing this roll thing. I think we can do it if we try hard enough. I have a bone in loin we can practice with. You see first you bone it all out.

You slice it and make it look all flattened out like. Then you get you some Cream Cheese and some Garlic Pesto and some John Henry's Texas Pig Rub. Slap them all together on there

Then you roll it all up with the tenderloin that you found on there to the inside. You make a big mess tying the thing up and season the outside

You pull the butt and roll 1:40 of Whiskey Oak Still maintaining the 230º that the Butt was at.

All in all It was a GREAT DAY. The HOT weather broke it was only like 83º, a light breeze blowing unless you was under one of the canopies. There was a lot of OLD FRIENDS and some NEW FRIENDS all having a good time together. There was absolutly no drinking, or any lies told during the entire weekend!! :o :o That's it I am out of pictures.

It only took two hours to assemble and there were only two extra parts that Chris and Hal decided they weren't needed. That two hours does not include the Twenty minutes it took to get it out of the box.

Man I wish I could have made it. Would have been much more fun than sitting here at home crying while thinking about the good time you all were having. Okay, the tears didn't flow and I had some racing friends to keep me company online, but still. lol
I blessed that (nameless) cup with the usual procedure.
Heck, the letters prolly fell off it by now.
And, yes the grill worked great ---- despite the yahoo builders!
I would like to take the time to thank everyone that i got to meet at the smoke out. I cant express enough how much i appreciate the time and effort spent by all of you, it was an experience i will never forget. Thanks for all the amazing food and memories. Hopefully next year i am able to spend more time with you all.

Really simple Jay
White corn tortillas cut however you want them. Drop in hot 300-350 canola oil. Leave them in the oil just until they start to change color then drain on paper towels and season with sea salt or what ever flavoring you want to try right away. Toss into a brown paper bag to soak up any extra oils. That's it.
The ones seasoned with Veron's Cajun flat out rocked..
