Late report, sorry.  :P

I've been wanting to make this for a while now. So on Saturday I picked up some Butts and ran them through the fine plate.

This is a 5 lb batch.
1/2 poke and 1/2 venison

I didn't use any clove being I didn't have any in the house.

Mixed up and going for an overnight rest.

Got up bright and early, stuffed them and letting them air dry @130 in the OBS.

Smoked these with hickory pucks and brought the IT up to 144 before dropping them in the poach bath. I got lazy and didn't want to wait any longer.  ;D
Brought them up to an IT of 152, ice bath to 100 and here they are blooming.
Smell is incredible!

Let them rest in the frig and took them out on Monday after work.

Casing peeled off nicely. Here's the money shot.

Big thanks to Kirby for posting his recipe on here. This is by far the best I've made to date with just the right amount of Garlic and Mustard Seed.
Now I only wish I made more.... :o

Thats a great recipe!

Those do look spectacular. Did you use liquid smoke (in picture) and hickory in the Bradley?

Yes, I mixed a little liquid smoke in with the water. I wasn't overpowering at all, it tastes great.

That looks great Sam. I agree you should have made a larger batch. That is going to go fast.
I like all the mustard seed and garlic. I have that recipe on our auto Excel sheet. It does all the spice modification for you when you want to change batch sizes. If someone wants it they can email me at    [email protected]
