Title: Collect drippings?
Post by: Smokin Elvis on July 28, 2012, 08:55:26 AM
Any of you guys collect the drippings under your butt?  (sorry that sounded really bad)
I was wondering if you added them in at the pull?

Definitely!  I defat and add to pull as necessary.  The rest I freeze into ice cubes for flavoring soups, etc.

Note that I politely left the "other answer" to KyNola.

Ive never had but I see plenty of folks that do, I might try it next time as stated above. To add back to the meat after its pulled.
And yeah, the answer for this can go in a whole different direction.  ;D  Where's Larry on this one  ;) ;D

Here one way.  ;D :o

I've done it. Most of the time I place a pan on a rack below the butt and add a dark beer and let it collect the drippings into it, then separate the at out and add a little back in after the pull.

I did for the first time with my last butt smoke for a perty I did.  I first added in a pan of beans to catch some drippings for 2 hours then fridged the beans and added a pan to catch all the drippings.  When complete I placed the drippings in a bowl in the fridge, they solidified like grease would.  When I heated the beand I placed a hgenerous scoop with them.  As I stated this was the first time I did this and was not sure how the beans would turn out.  During the party before I tasted the beans myself I had several people come to me asking how I made the beans as they were delicious!
When I finally got around to trying them they werew GREAT!  Picked up a bit of the spicyness from the rub and had a hint of heat /smoke.  I will be saving all my drippings moving forward for future projects, not to mention it also keeps them away from the heating element and a grease fire.
