Title: Casing toughness
Post by: aknapp on August 03, 2012, 09:50:48 AM
I've had some trouble with my hog casings being a little tough lately.  What do you do to make the casings more tender or easier to chew after cooking?  Or is it just my casings that are kind of thick and tough?

Soak the casings longer and use the water pan after the smoke is done.

What type of casings are you using?

I had this same problem, is it just not soaking the casing enough before you stuff them? or is it cooking it to fast and too hot? I'm really new ot making suasage but i am willing to try anything.
