Title: venison burgers?

Has anyone tried bradlys recipe for venison burgers?

I have tried them once. but found them to be a little dry. im thinking about adding some sort of fat to them. any ideas?

Because venison is so lean whenever I make burgers or sausage I grind up a pork butt and mix it together. This way it comes out moist but not fatty. Usually the ratio I use for burgers is 70% venison & 30% pork. But of coarse you can adjust to personal preference.HTH[:)]

I agree with Bassman. Pork butts are a good choice. For venison something else we have used is store bought bacon. I usually try to pick some out that looks to be on the fat side. For one pound of bacon you should be able to grind at least 5 pounds of lean meat. Give it a try. It works for anything you would use ground beef for.

Big Venison user here , about 8 deer a year sausage, snack sticks ,salami,venison bacon ,and my burger all get 10% straight
  BEEF FAT   why ?? taste and moistness is where I like it . most of all ........  its free !  most butcher shops through a lot of beef fat in the garbage .  just find a butcher like I did let him know your interested and you can get as much as you want . I generaly give mine a call and he lets me know when he has another critter coming in and he sets as much aside as I want in his freezer .  I show up with a 12 pack of his favorite malt beverage and we are both pleased .. lol
