Bought my Bradley in march and have done mostly Jerky from seasoning kits from cabelas. Looking to expand. Tried a brisket and family was pleased. Gonna try a butt this weekend. I'm also going to prep for hillbilly bacon for next weekend. Can't find Morton quick locally. Any suggestions on a cure ?

they have morton's as well as pink salt. They are SUPER great and I get most of my spices from them. Super fast shipping and awesome to deal with.

Welcome to the forum.

Though Morton's Tender Quick is convenient, purchasing cure #1 and pickling salt is less expensive. There is a Morton Tender Quick substitute; Basic Cure (http://www.susanminor.org/forums/showthread.php?441-Basic-Dry-Cure-Morton-s-Tender-Quick-substitute&p=691#post691). If you are not familiar with cures, you may want to look at Curing Salts (http://www.susanminor.org/forums/showthread.php?736-Curing-Salts&p=1126#post1126). If you purchase one of the Morton's cures, for the curing you want to carry out, do not purchase the Morton Smoke Flavor Sugar Cure.

If you need a wet cure, I can post a basic recipe for that if you need it.

I started saving them today. I wish I had kept a journal of my smokes too. Can't seem to duplicate my sucesses.
