I made 5 lbs of Classic Bratwurst from the Charcuterie recipe and a pork belly's worth of maple cured bacon recently. I steamed the brats in beer and onions on the grill and topped them with bacon.The brats are the best sausage I've made and the bacon is excellent. Served on a bun with mustard.

Two of my favorite things, bacon and brats (of course with a cold beer to wash it down with).
