Title: Grilled Zucchini
Post by: rcger on August 07, 2012, 06:10:29 PM
Here's a great but simple recipe for Grilled Zucchini.  Wash the zucchini and cut off the ends.  Slice like you would cucumbers, about pencil thick.  Put the zucchini into a ziplock and dump in a bottle of Italian Dressing.  Let it set in the refrigerator overnight.  The next day, grill them on your BBQ grill.  Put some nice grill marks on both sides.  Take them off of the grill, sprinkle with salt, pepper and parmesan cheese.  I think you'll love them.  You can keep them warm in a 200* oven.  Put them on a wire rack.

Sounds great..., might have to try.  Another awesome way to do the Zucch is to slice as you described, roll in a beaten egg mixture, then dredge in a breadcrumb mixture with your favorite spices added.  Fry in a shallow plan with olive oil, and enjoy!!!

This sounds good.  Another way I have done Zucchini strips - dredge in beer batter and fry in 1" of veg or peanut oil.  If you have some strips of Alaskan Cod to fry with it , that is even better.  I have three zucchini plants in my garden.  One plant can usually feed a family of four for the total Summer.  I have plenty of zucchini. ;)  :)
