Title: Elk Help

My brother lives in an Alaskan village that is fairly remote.  They eat a lot of elk over the winter and for some reason has been asking me? for advice on different ways to cook it. I plan to send him a "care' package of different spices and seasonings, and wonder if anyone and fill me in on what I could send him. I have never eaten elk and don't even know where to begin.  Also they eat venison and salmon(that he caught and smoked).  He has made Hab's pastrami recipe and loves it.  Thank's in advance!  Sandy

I usually treat elk just as I do beef.
