The long wait is over. It has lost the 30% weight I was waiting for.

We started out looking like this. All cured (#2) and seasoned.

Added some more hot spice

Got it all tucked away in its new home

Made sure it was not going anywhere by adding the netting

Got the start weight

Into the curing chamber it went with a bunch of his buddies.

So from June 16th the wait was on.

But than today came and it was all worth it.

Thanks everyone for the nice comments. Never thought I would be doing something like this a year ago but here I am thinking about what I want to try next. I really need to retire from my job so I have more time for this  ;D ;D

Oh my gosh...  that looks SO good.  I've not used my dry-cure fridge for WAY too long.  Having a young child (9 months old now) has somehow eaten into a lot of my spare time  ;D.  Wouldn't change it for the world of course...  but damn I miss playing with my own toys!!

On a slightly OT but vaguely related note, I'm really looking forward to getting my hands on this new Ruhlman book:
