Title: Kielbasa 19 AUg
Post by: ratherbboating on August 30, 2012, 01:02:25 PM
Got my new grinder. http://forum.bradleysmoker.com/index.php?topic=29454.0 (http://forum.bradleysmoker.com/index.php?topic=29454.0) So I had to take it out for a test spin.  Made Smoke Kielbasa, using Bruce Aidells' recipe.  This was a little different kielbasa from others that I have made in the past.  I have made several of Aidells sausages and like them.
Back to the current project.
Stuffed into hog casings:

And the money shot:

I ran out of casing near the end, so I made patties and smoked them at the same time (that's them on the bottom on the plate).  Did both long links and about 6-7" links.

Tasted good.
