Title: Smoking green chilies?
Post by: MrSlick on September 01, 2012, 10:13:19 AM
I have read about people smoking jalapeno and habanero chilies but has anyone ever done green chilies?  We got a bunch of green chilies in our Bountiful Basket today and I'm not sure what to do with them yet.

Sorry for the immensly late reply....

I regularly smoke then dehydrate green chillies then macerate in distilled vinegar to make a nice hot sauce. All I do is just slice the stalks off and throw them on the smoker. Simples.

I smoke lots of peppers and with the thicker skinned peppers prefer to slice in half and put the cut side down to smoke and dry.

I prefer to slice them all in half as they smoke and dry much quicker and smokier.I assume because more surface area smoking both sides.
Going to see  how it works on the Butch-T Trinidad Scorpions this year if crops go well.
