Just wondering if I can put my summer sausage back in the Bradley or oven and dry it out a little more? It was cooked to 152 but my buddy wanted it more like a dried salami. What about leaving it uncovered in the fridge for a week?

Leave it it the fridge for a few days. Its safer that way.
