The guy who gave me the pecan logs the other day brought 10 lbs of GBCH over and asked if i can make him some SS  ;D

Looks like you have set up shop!  Congrats  ;D  10 lbs of the famous NEPAS SS to a neighbor and he will spread the word.  Pretty soon the entire KOA community will be knocking down the door for SS and Stix's.  Just make sure you remember how to make der hoofen  ;D.  Matter of fact I made up 5 pounds of the Black Forest but no der hoofen.  :o

Got 5 lbs of pastrami SS mixed.

Mix of assorted items, cure 1 and 1 cup water.

Let this stand for 30 mins to marry up before adding to the meat.

Mixed into the meat. Have to use my wifes KA with dough hook until i can get a nice table setup outside for my mixer and stuffers.

Out of regular zip gallons so i used a zip vac bag. Going to let this in the fridge while i get things ready for the other 5 lbs.

Going to stuff, smoke tomorrow and sat.

At this rate, you will be building a small building outside the RV to do all your sausage work.  Your version of a "dog house".

Had some internet issues along with rain and rain and rain  :o

Finally got the pastrami SS stuffed and smoked.

2 darker got done faster  :o Blooming while the other catch up. Going in the fridge for a couple days.
