Title: Teriyaki Brine and brine time
Post by: orion39 on September 13, 2012, 07:08:11 AM
I have seen brine recipes that let the salmon brine for anywhere from a few hours to a few days.  One recipe that i really like is a Hawaiian Salmon that brines for 2 to 3 days.  Any thoughts on the length of time to brine and if you can brine for to long? Thanks.

This was copied from the internet:

1 gal water
½ cup of salt
I cup unsweetened pineapple juice
I cup teriyaki sauce
1 cup brown sugar

Brine time depencs on the fattiness of your fish (more fat means a longer time) and the saltiness of your brine. If you look at kummok's recipe it is 1 cup of coarse salt plus a jug of terrayiki or soy sauce which both have more salt, as well as 2 lbs of brown sugar. The time for that brine is 12 hours. We need more details of your hawaiian recipe.
