After messing up 5 lbs of Lebanon bologna the other day i said self, Time for some ring.

Had to rack one cuz the hog ring cut the end of the casing.

So what happened to the Lebanon .... or shouldn't I ask? ???
I often wondered what difference there would be between hanging the meat in the smoker or racking it. It will interesting to see the end results.
Here is the ring. Im happy with it. Going in the fridge cuz my son is visiting.

Excellent results and I can't see any difference between the rings that were hung and the one that was racked. 8)
