I love a good Cuban sandwich. Here's what I came up with:
2 pork chops, basic 2 hr brine
2 thick slices of ham
2 slices of Swiss cheese
2 pickles
2 slices of bacon just to help wrap 'em all up tight
spicy brown mustard
Pounded out the pork chops, slathered them in brown mustard, put down a slice of cheese and a pickle and rolled 'em up; secured them with toothpicks and smoked 'em with Special Blend for an hour, then waited until the temp got to 165. At least that's what I should have done, I got in a hurry trying to time the main course with my sides that I took them off at about IT 153... too early. Hoping I didn't just give us food poisoning. They tasted damn good, but a little more rare than I would have preferred. Assuming I don't die, I'll call it a success.

They say pork is cooked at 140. You should be good to go. Looks good too.

The best part is that I've still got some ham and Swiss left over for a smoked Chicken cordon bleu later this weekend! I sure do LOVE this new smoker. ;D
