I see you are doing 35 lbs and it appears they are all with the same recipe / cure. If that is right then you must have found a cure / recipe / smoke combo that you are pleased with. :)
I am about to try some belly bacon for the first time and have a 6lb slab in the fridge to thaw out overnight. So I am wondering if you would share your recipe for cure, spices and smoke time / pellets, etc. that you have found worthy of doing a 35 lb batch. ;)

I have always wanted to make my own bacon but you can't get pork bellies around here. The butcher shops use them to make their bacon. I was talking to my BIL the other day and he bought a whole hog at a local fair. I asked what he done with the bellies and he had the whole hog butchered and processed. So they were already made into bacon.
