Just noticed I havent posted a chicken I cooked a while back
Rubbed down with peanut oil then a dusting of Gun Powder Seasoning
(http://i726.photobucket.com/albums/ww263/OU812_bucket/poultry/100_3210.jpg)
Lower that baby in the TBE basket
(http://i726.photobucket.com/albums/ww263/OU812_bucket/poultry/100_3212.jpg)
Let that sit out wile the smoker comes up to 250 F then give it 2 hr Apple and we got this
(http://i726.photobucket.com/albums/ww263/OU812_bucket/poultry/100_3214.jpg)
Lower that bad boy in TBE that has been warmed up and 45 min later we got this
(http://i726.photobucket.com/albums/ww263/OU812_bucket/poultry/100_3215.jpg)
let sit 20 min to rest and make the rest of the eats, then carve
(http://i726.photobucket.com/albums/ww263/OU812_bucket/poultry/100_3217.jpg)

My favorite!

People say "that's a silly waste of money, use stale bread crumbs".

Umm...   Why do you waste bread by letting it go stale??

I used it as a binder for some chicken patties last week.Chopped leftover smoked chicken, stovetop stuffing, broth, eggs ,some additional bread crumbs, fried in a bit of butter. The smoke still came through, and the stuffing mix gave the just the little extra something to make it real tasty.
