Heard this was very good. They was right  :)

Coppa, Cream Cheese, Asparagus. Virgin olive oil and lemon for dipping

Looks great Don, Have you tried Coppa in a 100MM collagen casing? I want to order casings for coppa butt not sure about the beef bungholio's  ;)

I have only tied beef middles and beef bungholio's  :o so far

I have only tied beef middles and beef bungholio's  :o so far
I just ordered the bungholios as I remember you saying it was hard to stuff those . I can't imagine trying to stuff a non elastic collagen casing. I spent $80 bucks and free shipping. I got some hog rings 3/8" and 1/2". Ordered a couple salami mixes (dry). I ordered some christmas casings and some summer sausage mix. whats left of the family gets Summer sausage for chrismas this year and if I really likem I might givem some toothpicks too ;D

Oh Ya!

Love anything with asparagus

Do the same kinda thing with bacon, sometimes ham and home grown asparagus

Cant get my grubby hands on any Coppa  ;D

I like wrapping my asparagus with bacon but man does that look good! ;)
