Title: French Onion Soup
Post by: Bear1968 on September 28, 2012, 10:44:58 AM
I found a recipe for French Onion Soup in a local newspaper that called for smoking the Onions and French Bread so I thought I would give her a go :)

Into the Bradley for about 45 minutes with smoke only.

Hardest part for me is caramelizing the Onions ..... But the smokey smell coming out was unreal!

All done! Float a piece of smoked French Bread, Sprinkle some grated Swiss and Parmesan on top and put under broiler til toasty. YUM!  ;)

The smoke in the onions and the bread made a HUGE difference. Just be careful when ya open up the smoker door and get blasted right in the face with the "Onion Smoke" ....  :'(

That looks good!

I tried making a smoked onion soup when I first got my OBS - what a cluster of terrible mistakes I made  :'(
No one liked the resulting grewl that I wound up slopping together  :o  including me

Haven't tried that again since then but this leaves me with hope that I should try again...
