Title: Chili time!

Its windy and cold this weekend so i had to make some Chili to warm me up
1 1/2 lb beef stew meat cookin in the fat from 6 slices of bacon

A big ol yellow onion, bout the size of an softball

Two stalks chopped celery,,,,,,thats right celery

Drained off all the drippings and dumped all that goodness in the crock pot, put the drippings back in the pan and brown 2 lb ground deer,,,,shhhhh dont tell momma

Back to the crock pot, 2 Tbl broken leaf Cilantro, 2 clove minced garlic, 3 tsp ground cumin, 1/4 cup Hot chili powder, 2 Tbl sugar, 1Tbl salt, 1 tsp cayenne, 1 tsp smoked  paprika, 1 tsp ground Hot mustard,1 Tbl cracked black pepper. All Penzeys spices

2 cups beef broth and mix well,,,,yep Penzeys

Four 14.5 cans peeled tomatoes, quartered, un drained and two 6 oz cans tomato paste

One 27 oz can Bush's dark red kidney beans, rinsed and drained, one 27 oz can Bush's chili beans, un drained

Almost forgot the green pepper, 1/4 cup plus 2 Tab dehydrated

Aint gonna add the jalapenos and ground deer along with 1/4 cup corn meal till the last 2 hr of cookin
Allready smells gooood,,,,,,,,,,,,,stay tuned

My wife dont much like chili either, but if you lay down a hand full of Fritos, a scoop of chili, a hand full of shreaded cheese and top with a blob of sour cream shell dig right in.  ::)

We call it Chili Fritolay  ;D

Looks awesome!!!

Just bookmarked for a future cook. My wife doesn't like Chili either and judging by the list of ingredients I would be eating this stuff by myself for about a month or so. :) Might have to cut in half .. but gotta have some. ;D

? about the chili.  Is the corn meal just to thicken?

Yep,,,,,,,,,,,,,,,,I like a thick, eat with a fork, no need for crackers kinda chili  ;D

Thats what I thought.  Is that what gives it the brownish tint or is that from the deer.  I am going to use your recipe as the base and add to it to make it my own.  I am sub. the deer for GB and adding some left over pork scrap from ribs and boston butt that I have been saving in the freezer.  I also prefer lees bean so should I only use 1 can of beans?

That brownish tint is most likely from the beef broth,,,,,I make my broth on the strong side  ;D

One can of beans would work,,,,,,,,,,,,,,,,if'n ya dont like beans,,,,,,,,,,,,leave em out

I like beans just on the light side.  More meat less beans for me.  Thanks for all your help buddy!
