Title: Smoked Brats
Post by: phoenix316 on October 10, 2012, 04:38:49 PM
Can you smoke brats with the casing on?  Will the smoke penetrate?

How long do you normally smoke them for?

Also, I will be smoking some cashews with them, should I keep the cashews above the meat?

Thanks for the help.

Are you doing the heat and eat or did you make the brats yourself and want to add some smoke to them? if its the latter then you should have added cure #1 to the mix.

Cold smoking then smoke the cashews above the brats and use ice in the cabinet.

That's my suggestion

Heat and then eat.

Maybe freeze some of the cooked ones for lunches later in the month.

Also thinking of doing some baked beans under the brats now.

Bush's baked beans

Bacon

Chopped up onion

Brown sugar

Sweet red peppers

Having not done this before. I would preheat the cabinet to 250. Put the beans in there and start the smoke. Not knowing how big of a pot of beans you have makes this hard. Smoke and heat the beans stirring every 20 minutes to get the smoke flavor in there. Have the brats on top and go until the beans and brats are heated through since your probably using store bought precooked brats
