Title: Question for the expert sausage makers out there(NEPA)

 I'm looking thru my Allied Kenco catolog to see what I need to re-order and see what else I might want.  I see Sodium Erythorbate, Description: accelerates the nitrate curing reaction and maintains color brightness. Add 1/2 oz  to water when soaking casings for a better smoke color.  So have you tried it? and does it work? is it worth trying?  As always thank you for your help!

Yup i tried it, didnt notice a huge difference.

Keep your $ unless you need SE for something else.
