Title: Spicy sticks Based On Len Poli' stick recipe
Post by: devo on October 17, 2012, 03:27:28 PM
Recipe can be found here.

I of course changed up a few things. Doing ten pounds.  No pork trim just 90/10 ground beef. Beer instead of water for mix. Instead of cayenne I used my fresh smoked ground peppers.

Test sample

Very nice amount of heat and a very nice flavor, should be real good after they get smoked.

All bagged up and into the fridge for tomorrows stuffing and smoking. Going with natural sheep 20-22 MM with these. Hopefully  ::)

Hmmm..........well I work four 12 hour shifts than I get 4 days off. You would think I could get so much more done but I don't. After working my last night shift it takes me two days just to get going again

You might have to add some water, or beer, to your mix so you can squirt them out after the over night rest
